egg-free Banana Bread

Ingredients:

Wet:

  • 1 1/2 cups sugar

  • 1 stick of butter ( 8 tablespoons) at room temperate. You CAN melt the better, but I’d rather you not.

  • 1 yogurt (I prefer vanilla, but truthfully any flavor will do)

  • 1 tablespoon Vanilla

  • 2 big or 3 small ripe bananas

Dry:

  • 2 1/4 cups flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • Chocolate chips or nuts optional

Directions:

  1. Preheat your oven to 350 degrees.

  2. Start with your wet bowl. This bowl needs to be bigger than the bowl you use for your dry ingredients.

  3. First mash up the bananas. Then add all the remaining wet bowl ingredients: Sugar, Butter, Yogurt, and Vanilla. Mix thoroughly so all ingredients are combined.

  4. Mix all the dry ingredients together in a separate bowl.

  5. Slowly add the dry ingredients to the wet bowl. Mix thoroughly. If you want to add nuts, or chocolate into your bread this is the time to do so.

  6. Grease an 8 x 4 loaf pan. Pour mixture in loaf pan.

  7. Cook for 30 minutes uncovered. At 30 minutes, the top should be browning but the center still raw. Cover with foil and cook for 30 additional minutes. If the center is still raw after 60 minutes, cover and put back in the oven checking every 15 minutes. You want a knife to come out clean.
